I have walked through the doors of the George V enough times now that the doormen recognize me. This embarrasses me slightly and delights me enormously. The hotel stands at 31 Avenue George V in Paris's 8th arrondissement, steps from the Champs-Élysées, wrapped in the particular silence that money buys, not the silence of emptiness, but of considered restraint. Inside, the scent changes the moment you cross the threshold: something floral and cool and faintly expensive, before your eyes have adjusted and before you have registered anything else.

The Flowers

In 1999, a florist from Utah named Jeff Leatham joined the hotel as Artistic Director. He has not left. Three trucks arrive each week from Amsterdam, some growers cultivate varieties exclusively for this address, and within hours the lobby vases hold thousands of orchids, peonies, and roses in hues I cannot name. The arrangements change every three weeks, calibrated to the rhythm at which regular guests tend to return. A hotel that choreographs its flowers around human habit, so no returning guest ever sees the same composition twice. I find this almost unbearably beautiful.

The flowers are not decoration. They are the hotel's mood and its opening argument. At Christmastime, Leatham's installations stop people mid-stride in the courtyard. I have seen grown adults photograph the lobby the way tourists photograph cathedrals, reverently, with their mouths slightly open.

The Rooms, Reimagined

In September 2025, the hotel completed a full renovation of all 243 rooms and suites, the first overhaul since 1999. Interior designer Pierre-Yves Rochon, who has shaped this building's identity for two decades, reimagined each space as a private Parisian residence. The phrase sounds like marketing. Inside one of these rooms, it is simply true.

The George V's rooms are the largest of any hotel in Paris. Mine had a curated library of actual books, a workspace lit by a lamp of such quality that writing felt important, and new French windows positioned to capture Eiffel Tower light through the afternoon. The palette: pale ivory, barely-there sage. Louis XVI furniture sat alongside 19th-century paintings and contemporary accents without conflict. The Carrara marble bathroom held a freestanding bath that caused me, I will confess, to cancel one evening's dinner reservation.

The Table, Six Stars in One Building

The George V holds six Michelin stars across three restaurants and one Green Star, the only hotel in Europe and the Middle East with this distinction. That sounds like a statistic until you sit down and eat.

Le Cinq, under Executive Chef Christian Le Squer, occupies a gilded salon of soaring ceilings and silver trolleys. The cuisine is classically French in its foundations but lighter-handed than its setting might suggest, precise, deeply satisfying in the way only decades of accumulated technique can produce. I once ate a sole here that stayed with me for years.

Le George, led by Chef Simone Zanoni, offers one-Michelin-starred Mediterranean warmth built for sharing. Zanoni keeps a kitchen garden at Versailles and is known to escort guests there in a hybrid sports car to pick produce, a theatricality that finds its way, genuinely, into the generosity of the food.

L'Orangerie, newly reimagined by Rochon and holding two Michelin stars under Chef Alan Taudon, is the most quietly dramatic of the three. A suspended sculpture of thousands of porcelain bougainvillea petals hangs overhead; the cuisine aligns itself with natural materials and seasonal light. Lunch there on a grey winter afternoon felt like eating inside a private ceremony.

The Spa and the Quality of Silence

The spa is smaller than you might expect for a hotel of this scale, I note this without criticism. The indoor pool is beautiful and still. The steam room restores. But the real spa experience at the George V happens in the room: the bath, the silence, the quality of the robes, the pillow arrangement that appears without being requested. This hotel understands that luxury is not always a treatment. Sometimes it is simply the hour before dinner, undisturbed, with the city below and your thoughts your own.

On Price and on What Price Buys

A classic room runs approximately €2,000 to €3,500 per night; suites climb steeply from there. I will not argue this is reasonable, it is not. But the George V does not waste money on spectacle for its own sake. The staff remember your name from a visit years prior. The flowers are replaced before they show age. The 2025 renovation has given the rooms genuine freshness without erasing the soul of a building that opened in 1928. The continuity here, between old and new, intimate and grand, the restless city outside and the calibrated calm within, is something very few hotels in the world sustain.

I stay here rarely enough that each visit feels like an occasion. And I leave each time carrying the particular sadness of somewhere that treated your comfort as though it were the only thing that mattered.
